Can you tell us a bit about your life post MKR and does it look different now?
Its been an absolute whirlwind, 2017 went so quickly and I can hardly believe everything that's happen in such a short time since appearing on My Kitchen Rules. I made a conscious decision last year to take the time to work on new projects, gain new skills and really step out of my comfort zone. Its been both exciting and daunting riding this wave of adventure, but I just keep reminding myself to be brave, seize this opportunity and make the most of things. Hard work pays off right?
What hasn't changed is i'm still the same Court, I feel like I am the same person who does the same things (and now more) but just feel like I have had this incredible adventure that has elevated my life to a whole new level of excitement.
How do you manage finding down time when being in the middle of filming or travelling?
When filming there was literally zero down time, in the rare instance we had a few hours off we were reading recipe books, practicing, perfecting, catching up on sleep (we basically survived off 4hrs sleep a day for 3 months) so it was difficult. Mindfulness & meditation helped me, and gym sessions to sweat and release some endorphins helped too.
Have you met anyone interesting/famous on your journey?
I have met many interesting/inspirational people on my journey so far - Joh Griggs, Steph Rice, Curtis Stone, MKR judges - Pete, Manu, Colin & Darren to name a few but also all of the amazing marketing/production teams on events I have been involved with, these guys never get enough credit.
Whats your go to healthy meal or snack you whip up at home?
In terms of a meal it would be my steamed fish in a bag - I loveee my fish, eat it around 3 times a week or a spicy beef stir-fry. Go to snack would be raw veggies - carrot, celery and cucumber sticks with a fresh homemade chutney, hummus or guacamole. QUICK & EASY
Whats your favourite way to move your body?
Yoga, talking... is that exercise? Tennis, gym and who doesn't love busting a move to music.
If you were to retreat anywhere in the world where would it be?
Somewhere tropical - Bahamas, Maldives and def my fave San Sebastian in Spain.
Whats your favourite self care practices?
Listening to music, yoga, having a bath, reading and cuddling my sweetie pie Benson (my puppy)
Do you have any specific goals for the rest of this year?
I want to travel more, I want to live more and of course I want to EAT more. Looking forward to cooking more dishes, filling up the calendar with events, meeting and being in contact with more amazing people, publishing a cookbook and the much anticipated launch of a business i've been working on...watch this space!
Do you have a business or life coach? Who do you look up to for advice/guidance?
No, I don't have a life coach.. but I feel like I need one sometimes. I am grateful for the amazing people I have around me, that give me great advice and support. Its important to surround yourself with people that are positive, uplifting and encourage you to be the best version of yourself.
Whats your favourite book of all time?
I am a sucker for a good personal development book. I think its important to always be learning about yourself and be open to growth.
