My Chia Seed Pudding Recipe

Without doing too much of a deep dive or oversharing I have been on a journey this year of looking for ways to aid my digestion and get back into the habit of nourishing my body with the right foods. A lot of travel to third world countries over the past few years has left my guts feeling less than amazing and so I am turning to chia seeds at the moment as a super easy (and delicious) way to get some more fibre into my diet. Plus, those of you who know me know I am a massive sweet tooth so any excuse to have something sweet for lunch!
Now I know a few years ago chia seeds were a bit harder to find and a there was a lot of buzz around them as a super food. Now days you can get them a Coles or Woollies (which is super handy) and there are a ton of recipes out there for this delicious healthy snack.
But one that I am obsessed with at the moment (and in true Brodie style am eating every single day without fail right now for lunch and not even half bored with it) is below:
A basic chia seed pudding recipe that you can tweak to make your own
2-3 tablespoons of chia seeds
1/3 of a can of coconut milk
½ teaspoon vanilla extract
Pepitas or seed mix
I am using a standard size glass cup for my puddings but you could use any bowl or mason jar. Mix together in your cup chia seeds, coconut milk & vanilla, top with a big dash of water to make less thick. Once the pudding mixture is well combined pop in the fridge overnight.
The pudding will be set if it is nice and thick, not liquidy. If it’s not thick add more chia seeds, stir and refrigerate for another few hours. (hot tip I prep 3-4 puddings for my week of lunches).
When ready to serve simply put on top maple syrup, blue berries, cacao nibs & seed mix.
